Who is Baked!

 
 
Prior to preorders, BAKED! owner Kris Trawick worked out of the commercial kitchen baking breads and pastries for pop-up sales and promoting her business via her adorable blue bakery truck often seen a local farmers markets.

We are an artisan bakery/cafe focusing on slow fermented sourdoughs and European style pastries along with boutique breakfasts and bougie sandwiches, nestled in the quaint but lively town of Granbury, Texas. Everything we do is carefully hand crafted using the best ingredients, locally sourced when possible and BAKED! with a whole lotta love.

The BAKED! story began in 2017, when in a desire to live an intentional life, Kris left a corporate unfulfilling job at the age of 48 to pursue a purpose filled career that was best suited to her gifts and personality. She enrolled in a two-year culinary program, graduating in 2019 as well as taking several weeklong classes all over the country, learning how to make sourdough breads, bagels and laminated doughs.

The next year, while looking for a permanent home for BAKED!, Kris practiced and perfected her craft, taking her pastries all over Granbury and introducing herself and her future bakery. She found a 5000 sq ft metal building off the beaten path with huge windows and lots of trees and greenery. It immediately felt like home to her. She purchased the property in January of 2019, and spent the next 4 months renovating about 30% of the building, which would house the bakery. When she wasn’t elbow deep in flour, you could find her in her horse trailer, turned BAKED! Trailer at the farmers markets every Saturday in June, July, and August of that year. Eventually the lines were so long, that she decided to open her brick and mortar on Saturdays only while the rest of the renovation was still underway. Two white rectangular plastic tables were set up in the unfinished cafe area, with one of each of the pastries available, and loaded racks behind her. The line would start early, and she and her two employees would fill boxes of delicious goodness until they were sold out by 10 a.m. 

By March of 2020, COVID was amping up, and at the same time, Kris was diagnosed with cancer. Her daughter Jenna, who was finishing up her hospitality degree from FSU, moved to Texas April 1st to partner with Kris on BAKED!. Jenna was able to procure the funding needed to finish the cafe portion of the building, as well as launch a website for preorders. As other businesses were closing down, BAKED! saw a huge increase in customers. In an effort to provide bread and bagels to the community when restaurants shelves were empty, they extended their hours of operation to include Wednesdays, selling sourdough bread and bagels only.

As Kris finished up her last chemo and radiation treatment, she and Jenna opened up their cafe full-time on American Women in Business Day, September 22, 2020, selling coffees, pastries, breads and very light breakfast options. While still growing their team front and back, their next focus was creating the kitchen and developing a lunch and breakfast menu. In August of 2021, they expanded their lunch and breakfast menus, and have been working ever since to perfect their sandwiches and creating new seasonal soups and sandwiches from scratch. 

As their business grew, so did their team and very soon they found that the bakery area didn’t have enough room for all of their employees. Their next area of expansion came in October of 2022 when they renovated the back part of the building to create a state-of-the-art bakery, allowing ample space up front for the bread team to grow and create new and seasonal breads.

They are looking forward to continuing their pursuit of excellent pastries, breads, breakfasts and lunches along with the warmest hospitality that could be rivaled anywhere. The next area of focus is catering opportunities for our wonderful community and who knows, you might find a BAKED! Coming to your neighborhood.
